Chef Carlene Shaw oversees the massive kitchen at the Edmonton Folk Festival that produces incredible meals for the more than 2000 volunteers that make the festival tick. Carlene also lives in South Africa and likes to bring a taste of home to the festival. Here is one of her favourite dishes.

African Bobotie

3 slices of day-old stale bread
One half-cup milk
2 onions, chopped
4 garlic cloves, minced
One half-cup slivered almonds
One half-cup raisins
1-tablespoon sugar
1-tablespoon salt
1-teaspoon curry powder
One-eighth teaspoon pepper
1-teaspoon vinegar
1-teaspoon lemon juice
1 and one half pounds ground beef
2 eggs

Preheat the oven to 350 degrees. Soak the bread in the milk for a few minutes.

Squeeze the excess milk from the bread, reserving the milk. In a mixing bowl combine all the ingredients except the milk and one of the eggs. Use your hands and mix until thoroughly combined.

Press the mixture into an 11 x 7 inch baking dish.

Add enough additional milk to the reserved milk to equal three quarters of a cup.

Whisk together the milk and the remaining egg. Pour over the meat mixture.
Bake, uncovered, for 1 hour or so until golden brown and firm to the touch.
