Spinach Salad with Orange Vinaigrette

For the Salad:
1 bag of baby spinach leaves
1 red onion, sliced thinly

For the Vinaigrette:
2 tbsp of orange juice concentrate
2 tbsp of olive oil
1 tbsp of Dijon mustard
Salt and pepper

Whisk ingredients together until emulsified.  Season with salt and pepper.
Put the spinach and onion into a large salad bowl and toss with the vinaigrette.
